Weekend Away & Peanut Butter Balls Recipe

I had a lovely weekend visiting my parents in NH this past weekend. It was nice to get away, relax, and spend time with my family. I mean, I did have to go to NH to get my first Remicade infusion but it was still nice to have an excuse to get away.

You know what gives me life? Peanut butter! It’s seriously the best thing ever invented by humans! My mom has been making these balls of deliciousness ever since I can remember. My brother always had one of these in his hands and a juice box in the other. I’m glad I can pass this recipe down to my boys. They love this yummy snack. I had to tweak the recipe a bit due to my food allergies but they still came out amazing and oh so tasty. These tiny treats are perfect for an on-the-go snack or a quick, easy, dessert to bring to a cookout. The best part?! No oven is needed! Win win.

Peanut Butter Balls

1 36oz jar of peanut butter

1 cup maple syrup

3-4 Tbs. coconut flour

1 ½ cups chocolate chips

Mix peanut butter and maple syrup together until combined. Add coconut flour one tablespoon at a time until ingredients come together and form a dough-like consistency. Add chocolate chips and mix to incorporate. Roll into balls and store in refrigerator. Store up to two weeks (if they last that long). Enjoy!
